Preservatives for food products are substances that ensure the death or inhibition of the development of harmful microorganisms in the product. At the same time, the product is protected from the appearance of an unpleasant taste and smell, mold and the formation of toxins. Preservatives can be conditionally divided into preservatives themselves (for example, benzoates, potassium sorbate) and substances that have a preservative effect in addition to other useful properties (for example, sodium lactate, lactic acid).
