Sodium Alginate
Sodium alginate is used as a stabilizing agent (E401) which helps to maintain the consistency and viscosity of foods. In addition, it is quite often used as a thickening agent, gelling agent, capsule making agent, and also as a moisture-retaining agent.
Sodium alginate is used in the production of meat and fish jellies. It is used as a thickener and / or gelling agent in desserts, processed and imitation cheeses, curd products, sauces, canned meats, ice cream.
