Low-ester pectin

Low esterified pectin (NE) pectin has an esterification degree below 50. NE-pectins are relatively independent of the presence of sugar and acids, and are capable of forming gels with divalent cations, for example, Ca 2+ (calcium ions). Used in the manufacture of thermostable fillings.
